it's the last icon (bottom left, that looks like a lightsaber.)
the "getting started" part of the documentation is showing the old tools. in the new version, the tools have been replaced by the one tool you see in your screenshot.

i have the same problem and i don't understand how works the new tool... just clic and nothing happen...
no pen tool in the illustrator toolbox neither.

if you know what it is, please let me know.
